Hey Everyone - thanks for stopping by to check out my meal prep this week! Overall, this meal prep was great. Both the Chicken Fajitas and the Egg Roll in a Bowl are favorites of ours! And of course, I always love my Chocolate Peanut Butter Protein cookies! All recipes are below along with the link to my recipe from my WW App.
Chicken Fajitas:
2 pounds of chicken cut into small strips
7-9 Bell Peppers - any color!
1 packet of Frontera Fajita Sauce
Fajita Seasoning
Cumin
Chili Powder
Salt and Pepper
Saute peppers until softened, just season with salt, pepper, and fajita seasoning. Add chicken to skillet sprayed with olive oil spray and then add salt, pepper, fajita seasoning, cumin, and chili powder to the chicken - to your liking. Once chicken is cooked through - add 3/4 of the packet of frontera sauce, cook for a couple of minutes then combine the chicken and pepper, add remaining frontera sauce, mix well, and let it cook for a few more minutes.

Spanish Cauliflower Rice:
2 bags of Cauliflower Rice
2 cans of Rotel - I like to use one original and one hot or fire roasted
Fajita Seasoning
Cumin
Chili Powder
Salt and Pepper
Combine all ingredients into a pot on the stove, cook until cauliflower is softened and all of the liquid has dissipated.

Chocolate Peanut Butter Protein Cookies:
1 scoop PE Science Chocolate Cupcake Protein Powder
1 scoop Syntrax Matrix Peanut Butter Cookie Protein Powder
200 grams of 100% Pure Pumpkin
5 grams of sugar free Jello chocolate fudge pudding mix
10 grams of Hershey's Special Dark Cocoa
1 tbsp baking powder
150 grams egg whites
14 grams Lilly's Dark Chocolate No Sugar Added Baking Chips
Preheat oven to 350 degrees. Mix all dry ingredients together. Then add in the pumpkin and egg whites. Mix together well. Then add in the chocolate chips.
Makes 12 cookies.
Bake for about 9-10 minutes.
