INGREDIENTS:
.1 cup orange juice (fresh not from concentrate)
.1/2 cup sugar
.1/4 cup oil( unflavored)
. 1-2 tsp Orange zest
. 1/4 teaspoon orange/vanilla extract (optional)
. 1 cup Plain flour(Maida)
. 1/2 teaspoon baking soda
. 1 teaspoon baking powder
. Pinch of salt
. 1 teaspoon vinegar/ lemon juice
. For garnishing we required whipping cream,blue berries,orange pieces.
Method-How to make Orange cake
1. . In a big mixing bowl take orange juice, sugar and oil. Mix everything well until the sugar dissolves.
2. Now add orange zest and orange extract if using.
3. Now take a sieve and add plain flour, baking soda, baking powder and salt to it.
4. Sieve some of the dry ingredients to the orange juice mixture and mix it to combine well.
5. Make a smooth batter by adding all the dry ingredients to the wet mixture in batches.
6. Grease a microwave safe container and transfer the cake mixture to it.
7. Now add the vinegar in the cake mixture and mix it quickly.
8. Now microwave it on full power for 5 minutes. It may take you 4 or 6 minutes depending on your microwave and the size of the container. Check with the help of a toothpick if it is done.
9. Let it cool for five minutes before demoulding or let it cool completely if you are going to frost in the same container.
10. Spread some whipped cream on top and decorate with some fresh orange slices and blueberries
