Ingredients (makes 12 buns):
3 ¼ cup Bread flour
1 tbsp Active dry yeast
¼ cup White granulated sugar
1 cup lukewarm milk
80 g softened butter
1 tsp salt
1 egg
65 g softened (almost melted) butter
For the cinnamon mixture:
1 cup brown sugar
2 tbsp cinnamon
1 tbsp cocoa powder (optional)
For the cream cheese icing:
110 g Cream cheese (room temperature)
28 g softened butter
¼ cup powdered sugar
2-4 tbsp milk (room temperature)
Method:
1. Combine yeast, sugar and lukewarm milk together. Set aside for 5 minutes until fluffy.
2. Sift the flour in a large bowl then, add the egg along with the bloomed yeast mixture.
3. Mix with a stand/electric mixer using hook attachment for 1-2 minutes.
4. Add the softened butter and mix with medium speed for 6-8 minutes until the dough comes together and a nice soft dough has formed. (you can knead the dough with your hands as well)
5. Place the dough into a clean large bowl, cover and rest for 1 hour until doubled in size.
Meanwhile make the filling:
6. Mix together all the ingredients. Set aside.
7. Punch the dough to remove all the excess air. Place it on a work surface (if you`re not using silicon mat dust your work surface with flour) and roll it out into a 50*40cm/20*16 inch rectangle.
8. Spread softened butter on top of the dough and sprinkle all the cinnamon sugar mixture on top.
9. Roll the dough tightly into a large log.
10. Cut the log into 12 equal pieces using a dental floss or a sharp knife. Place them on a lined baking pan. Cover and rest for another 30 minutes until doubled in size.
11. Bake the buns in a preheated oven at 180C/360F for 20-30 minutes.
12. Allow them to cool for 5 minutes then, soak them with milk.
Cream cheese frosting:
13. Mix all the ingredients with a whisk until you reach the best consistency.
14. Transfer the icing into a piping bag and cover the buns with it. Enjoy the warm buns with a cup of coffee.

شیر 2-4 ق غ
