All beer falls into 2 main categories, Ale or Lager. Though historically, it is the younger of the 2, the Lager category dominates the beer market. When most casual beer drinkers think of "tastes like beer" they are imagining a lager. The trouble for brewers both casual and commercial is that Lagers are typically more intensive, slower and even more difficult to brew successfully.
I brewed 2 batches of the same recipe for a Pale Lager, and fermented one with a clean ale yeast, and the other with the most popular lager strain in the world. Let's talk briefly about how they differ chemically, and see how they compare in a tasting & casual sensory analysis.
