Ingredients
For the Chimichurri Sauce
· ½ cup fresh parsley, chopped finely
· 3 garlic cloves, minced
· ¼ teaspoon oregano
· 2 red chilis
· 2 tablespoons red wine vinegar
· ¼ cup olive oil
· ¼ teaspoon black pepper
· ¼ - ½ teaspoon salt
Method
1) In a food processor, combine the parsley, garlic, oregano, red chilis, and red wine vinegar. Add the olive oil and season with black pepper and salt; process again until smooth.
Notes: Refrigerate and bring to room temperature when ready to serve. The sauce can be used to baste meats such as chicken or beef for grilling or as a marinade.
