A delicious easy to follow vegan vegetables tagine recipe.
There is various ways to cook your meal in a tagine (in case you do not own one just use your cooking pot on low heat)
I'm sharing my own finger licking recipe today =) a rich fatty savoury sauce and melt in your mouth veggies !
This tagine may include some unusual ingredients for a regular one but it only take the taste to the next level !
Ingredients:
- 1 ONION
- 1 TOMATO
- 1 RED PEPPER
- 1/2 SMALL HEAD CAULIFLOWER
- 2 POTATOES
- A FEW GREEN BEANS
- GREEN PEAS (frozen) about 1/3 cup
- CHICKPEAS (I am using sprouted one) 1/3 cup as well
- SOY MILK 4 tbs (the secret ingredient for a rich flavourful sauce)
- OLIVE OIL 4 tbs
- THYME 1 or 2 sprigs
- OLIVES 8
- PRESERVED LEMON 1/4 lemon
spices:
- 1 tsp of each: SALT, SWEET PAPRIKA and GROUND GINGER
- 1/4 tsp of each: TURMERIC AND PEPPER
You probably already have these ingredients at home, If not, just use whatever you have on hand ! Feel free to experiment and come up with your own signature tagine !
