This Incredibly Easy Potato and Salmon Soup is SO SIMPLE to make and DELICIOUS. This is a soup that will knock your socks off.

INGREDIENTS
5 – 6 potatoes (cut into small cubes)
3 whole black pepper
3 Bay Leaves
1 ½ tsp salt
2 liters of water
1 carrot (grate on a coarse grater)
1 onion (cut into small pieces)
Extra-virgin olive oil
1 ½ LB (700g) salmon fillet (remove the skin and cut into large cubes)
7 oz (200g) creamy cheese wedges
Fresh Dill (chopped)

Put the potatoes in a pot. Put the water in a pot. Add the salt, whole black pepper, Bay Leaves. Cover the pot. Bring to boil and cook until ready, about 15 to 20 minutes.
Heat a skillet over medium high heat. Add the Oil. Add the onion and carrot, saute until golden, stirring occasionally. Remove from heat.
Add the sauteed vegetables in a pot. Cover the pot.
Remove the skin from the Salmon fillet. Cut the salmon fillet into large cubes. Add the salmon in a pot. Cover the pot and cook, about 8 to 9 minutes over medium heat. Add the creamy cheese wedges. Add the fresh dill to a pot. Cover the pot and cook, about 4 to 5 minutes.
When soup is ready, put it in your bowl and serve with fresh dill.
