Showing the sharpness of the edge RIGHT AFTER sharpening is pointless.
(Other than showing off / bragging purpose.)
Any knife is sharp right after you finish the sharpening.
Each one of these knives were used two days, after freshly sharpened.
You will see how much of the cutting performance was lost in two days of work.
This video also shows that you really shouldn't listen to "edge retention talk" on the net / Youtube.
