This is the tale and making of Testeroli. The first pasta ever created in Italy. The ingredient list is simple, just flour water and salt. However making it is like making pancakes then cutting it up and boiling those pieces!
It is simple, easy and actually pretty good. The origins lie with the Etruscans over 2500 years ago prior to the Roman Republic however this dish is still enjoyed in areas of Italy even to this day.
I keep it as true to taste as the original may have been by using spelt as my source of flour.
