Zucchini Fries : Low-Carb : Keto | Dr. J9 Recipe
Here is a delicious recipe for Zucchini Fries your kids are going to love. These tasty Zucchini Fries are full of yummy flavor with fresh grated parmesan cheese, smoked paprika and garlic. Zucchini Fries are a great way to get your kids to eat veggies for dinner, lunch or as a snack.
Zucchini Fries
Ingredients:
2 Medium Zucchinis
1 cup Panko Breadcrumbs
¼ cup Parmesan Cheese
½ tsp. Salt
½ tsp. Smoked Paprika
½ tsp. Ground Black Pepper
½ tsp. Garlic Powder
2 Large Eggs (whisked)
½ cup Flour
Directions:
Preheat oven to 425°F.
Cut zucchini in half lengthwise, then slice into roughly ½” wide by 4” long fries (no need to peel the zucchini).
Combine panko breadcrumbs, parmesan, salt, pepper, smoked paprika, and garlic powder in a medium bowl.
Place whisked eggs in a separate medium bowl.
Have flour in a third medium bowl.
Working in small batches, dip zucchini pieces into the flour, then the egg, and finally the panko breadcrumb mixture.
Set on a parchment paper lined baking sheet.
When all zucchini pieces are breaded, bake for 15-20 minutes or until golden and crispy.
