An easy gluten free version of savoiardi/ ladyfingers. These can be used for tiramisu, or simply just with coffee or tea.
Ingredients:
3 eggs (separated)
1/2 cup, White Granulated Sugar (divide in half)
1 teaspoon Vanilla Extract
2 teaspoons Fresh Lemon Juice + Zest of 1 Lemon
1/2 cup, Almond Flour
2 Tablespoons Potato Starch
1 teaspoon Instant Espresso Powder
Powdered sugar for 2 dustings
Method:
~Wash yuh hands
~Separate egg yolks/whites
~ In stand mixer beat the egg whites with half the sugar until they form stiff peaks
~In a separate bowl, combine egg yolks, remaining sugar, coffee powder and vanilla and whisk until silky; add in lemon juice/zest
~ Carefully fold in the egg yolk mixture into the stiff egg whites until well combined
~ Put mixture in a piping bag and pipe into desired shapes
~Wash yuh hands again... ah seem dem dutti de so!
~ Give the shapes a generous dusting of powdered sugar; allow to sit for 5 minutes and then repeat
~ Bake in a 350ºF/177ºC Oven for 15 minutes
~ Allow to cool- then stuff yuh gullet!!
