We recently visited Jamaica to celebrate Gail's birthday and we decided to do a collaboration with our Jamaican friends Chef Boom Boom and Tyrone from the Jamaican Youtube channels - Tyrone's Studio and Chef Boom Boom, respectively. In this episode we showed the Jamaican chefs how we make American Candied Yams, Southern Mac & Cheese and Honey Butter Cornbread and they showed us how to make 2 types of Ox Tails - Brown Stewed and Curry and Steamed Jamaican Callaloo with Cabbage. Brown Stewed Ox Tails
-5 lbs oxtails (washed in lime)
-2 scotch bonnet peppers
- sweet green bell pepper
- green onions/scallion
-Sprig of thyme
-garlic
-ginger root
-sea salt
-Grandma's house seasoning or any all purpose seasoning
-Fully bad jerk seasoning or other dry jerk seasoning
-ketchup
-browning sauce

Curry Ox Tails
- 5 lbs Oxtails
- dry curry seasoning
- chili powder
- garlic
- Sprig of thyme
- Carrots
-Grandma's house seasoning or any all purpose seasoning
-Fully bad jerk seasoning or other dry jerk seasoning
- sea salt
- ginger root
- green onions

Southern Macaroni & Cheese
- box of elbow macaroni
- 1 cup sour cream
- Grandma's House seasoning or any all purpose seasoning
- milk
- Cheeses of your choice (recommend sharp cheddar, Italian blend and Monterey cheese blend)
- 3 eggs
- heavy cream
- salt/pepper to taste

Candied Yams
- Yams (pre-boiled and peeled)
- sea salt
- 3 sticks of butter
- brown sugar
- molasses
- vanilla
- cinnamon

Honey Butter Cornbread
- 2 packs of your favorite cornbread mix
- 2/3 c heavy cream
- 1/3 c whole milk
- 1/4 c honey
- 4 oz sour cream
- 3 eggs
- 1 stick melted butter

Steamed Callaloo
- Jamaican callaloo greens
- cabbage
- tomatoes
-sweet peppers
- onions
- powdered coconut cream dry seasoning blended with water
- scotch bonnet pepper (can use habanero)
- pumpkin seasoning
- pumpkin or butternut squash (up to you!)
