Fresh Gremolata Sauce
Ingredients:
2 cups packed parsley (italian or curly is fine)
2-4 garlic cloves
zest of 2 small or 1 large lemon
2-4 teaspoons fresh lemon juice
1/2 cup (give or take) olive oil
salt and pepper to taste

Directions:
1. Place parsley, garlic, and lemon zest in a food processor and pulse until chopped.
2. Add oil, lemon juice, and salt/pepper. Pulse until combined, but still somewhat chunky.
3. Store in a jar in the fridge for 7-10 days or freeze in ice cube trays.
