Cooking the perfect fillet steak:
1. Have the steak at room temperature before you begin to cook it.
2. Season both sides with salt and pepper.
3. Lightly base with butter or oil.
4. Place on a pre-heated grill.
5. Seal all sides using tongs to turn.
6. Approx 5 mins either side for medium. Test for resistance in the steak with your thumb. The more resistance there is, the more it is cooked.
7. Once cooked, rest for 3 to 4 minutes.
