Biko Yema
This kakanin is very common in the Philippines. Each region has their own version of Biko. Some are baked and some are simply cooked like ordinary rice. Biko is usually top with latik or coconut sauce but now the simple biko recipe is modified. The biko today has a new face there's ube flavored biko and top with leche flan.
Today we will make the other version of special biko, the Biko Yema. Yema is also a delicacy in the Philippines. It is like a candy that is made of egg yolks and condensed milk. This is cook over low fire and you should stir it continuously until the consistency is thick. Then shaped into small balls and rolled in granulated sugar. That we will not shaped our yema into balls because we will topped it in our biko.
ingredients:
6 cups glutinous rice
6 cups water
Classic Biko:
3 cups kakang gata
1 cup brown sugar(more if preferred)
1/4 tsp salt
2-4 tbsp muscovado sugar(optional)
Ube biko
3 cups kakang gata
1 cup brown sugar(more if preferred)
1 cup ube halaya
1/2 tsp purple/violet food color(more if preferred)
1/2 tsp ube food color(more if preferred)
1/4 tsp salt
Yema:
6 egg yolks
600g condensed milk
*grated Cheese for toppings(optional)
