INGREDIENTS:
For Pav Bhaji Masala:
* Dried Coriander Seeds(सूखा साबुत धनिया) - 1/4 Cup
* Dried Fenugreek Leaves(कसूरी मैथी) - 1 Tbsp
* Cumin Seeds(जीरा) - 2 Tbsp
* Black Pepper Seeds(काली मिर्च) - 1 Tsp
* Kashmiri Dry Red Chili(कश्मीरी सूखी साबुत लाल मिर्च) - 4 Piece
* Dry Red Chili(सूखी साबुत लाल मिर्च) - 4 Piece
* Cinnamon Stick(दालचीनी) - 2 Piece
* Black Cardamom(बड़ी इलाइची) - 1 Piece
* Green Cardamom(हरी इलाइची) - 2-3 Piece
* Clove(लौंग) - 4-5 Piece
* Fennel Seeds(सौंफ) - 1 Tbsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tbsp
* Dried Mango Powder(अमचूर पाउडर) - 1 Tbsp
* Salt(नमक) - 1 Tsp
* Black Salt(काला नमक) - 1 Tsp
* Turmeric Powder(हल्दी पाउडर) - Less than 1/2 Tsp
* Dried Ginger Powder(सौंठ पाउडर) - 1 Tsp
For Sambhar Masala:
* Dry Red Chili(सूखी साबुत लाल मिर्च) - 12-15
* Dried Coriander Seeds(सूखा साबुत धनिया) - 5 Tbsp
* Chickpea Lentil(चना दाल) - 3 Tbsp
* Urad Dal(उड़द दाल) - 1 Tbsp
* Curry Leaves(कढ़ी पत्ता) - Some
* Rice(चावल) - 2-2.5 Tbsp
* Fenugreek Seeds(मैथी दाना) - 1 Tsp
* Cumin Seeds(जीरा) - 1 Tbsp
* Mustard Seeds(राई) - Some
* Asafoetida(हींग) - Some
* Dry Coconut(सूखा नारियल)
* Turmeric Powder(हल्दी पाउडर) - 1 Tsp
* Salt(नमक) - 1 Tsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tbsp
Chole Masala:
* Dried Coriander Seeds(सूखा साबुत धनिया) - 4 Tbsp
* Fennel Seeds(सौंफ) - 2 Tbsp
* Cumin Seeds(जीरा) - 2 Tbsp
* Black Pepper Seeds(काली मिर्च) - 1 Tbsp
* Carom Seeds(अजवायन) - 1/2 Tsp
* Black Cardamom(बड़ी इलाइची) - 2 Piece
* Green Cardamom(हरी इलाइची) - 4-5 Piece
* Dried Fenugreek Leaves(कसूरी मैथी) - 1-1.5 Tbsp
* Clove(लौंग) - 12-13 Piece
* Cinnamon Stick(दालचीनी) - 2 Piece
* Mace(जावित्री) - 1 Piece
* Dry Pomegranate(अनारदाना) - 2 Tbsp
* Nutmeg(जायफल) - Some
* Dry Red Chili(सूखी साबुत लाल मिर्च) - 6-7 Piece
* Roasted Gram(भुना हुआ चना) - 3-4 Tbsp
* Asafoetida(हींग) - Some
* Black Salt(काला नमक) - 1 Tsp
* Ginger Powder(अदरक पाउडर) - 1 Tbsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1-1.5 Tbsp
* Turmeric Powder(हल्दी पाउडर) - Some
RECIPE
1. For Pav Bhaji Masala, keep the pan on the flame, put Dried Coriander Seeds, Cumin Seeds, Black Pepper Seeds, Kashmiri Dry Red Chili, Dry Red Chili, Cinnamon Sticks, Black Cardamom, Green Cardamom, Clove, Fennel Seeds roast them. Then turn the flame off and roast Dried Fenugreek Leaves. Keep the all roasted Masala for cooling down. In a mixer jar, put Kashmiri Red Chili Powder, Dried Mango Powder, Salt, Black Salt, Turmeric Powder, Dried Ginger Powder, Roasted Masala and grind them all well. Pav Bhaji Masala is ready.
2. For Sambhar Masala, keep the pan for heating, put Chickpea Lentil, Urad Dal, Rice, Fenugreek Seeds and roast them and take them out on a plate. Then put Coriander Seeds, Cumin Seeds, Mustard Seeds, Asafoetida, Curry Leaves and roast them. Then Roast Dry Red Chili, Dry Coconut separately. Keep the all roasted Masala for cooling down. Put all Roasted Masala in a mixer jar, some Turmeric Powder, Salt, Kashmiri Red Chili Powder, and grind them all. Sambhar Masala is ready
3. For Chhole Masala, keep the pan on the flame, put Dry Pomegranate, roast it, and take it out. Then put Dried Coriander Seeds, Fennel Seeds, Cumin Seeds, Black Pepper Seeds, Carom Seeds, Black Cardamom, Green Cardamom, Dried Fenugreek Leaves, Clove, Cinnamon Stick, Mace, Dry Pomegranate, Nutmeg, Dry Red Chili, Roasted Gram, Asafoetida, and roast them on a medium flame. Take them out on a plate put Black Salt, Ginger Powder, Kashmiri Red Chili Powder, Turmeric Powder, and grind them and take out the Masala in a bowl. Store all the Masalas in an air-tight jar. In this way, 3 types of healthy Masala- Pavbhaji Masala, Sambhar Masala, Chole Masala will get ready at home.
