One of the most addictively satisfying side dishes you will ever try, this refreshing Polish beet salad will wow your guests and bring incredible flavour and colour to your Polish menu.
INGREDIENTS
- 1 pound Beets
- 1 Shallot, peeled & finely chopped
- Juice & Zest of 1/2 Lemon
- 1/2 tbsp Olive Oil
- 1/2 tsp Honey
- 1/2 tsp Kosher Salt
INSTRUCTIONS
STEP 1: Preheat oven to 375
STEP 1: Line a roasting dish with tinfoil and then parchment paper
STEP 2: Trim off roots and place beets unpeeled in the roasting dish
STEP 3: Cover with tinfoil and roast for 1 hour
STEP 4: Remove from the oven and let cool
STEP 5: Peel the cooled beets and grate them using the large side of a box grater
STEP 6: Add the beets and all remaining ingredients to a glass mixing bowl and combine well
STEP 7: Transfer to a glass serving dish for plating
