The short answer is that Fujifilm hasn't made a left EVF camera with an "eye point" or "eye relief" over 17mm since the Fuji XE2. Sony's A6xxx series all have 23mm eye relief points, so I can see the whole image.
Eye relief point = the distance from the screen in the EVF to your eye. My eye doesn't get close enough to cameras like the X Pro 2 and X100V, so I can't see the whole image in the EVF. Even the Leica CL APSC camera isn't as good as the Sony cameras with a 20mm eye point.
It is that simple. I suspect it is due to me having deep set eyes and wearing glasses. I also have a big nose so I can't comfortably use the 2 Fujifilm lines that do have 23mm eye points; the XTx and XHx.
The only Fujifilm APSC cameras where I can see the whole image in the EVF are the two central EVF premium lines: XT1, XT2, XT3, XT4, XH1 and XH2. But I also have a big nose, so I don't like the way my head tilts diagonally down at the ground when using a central EVF. I much prefer a left EVF with my favorite style of shooting: street photography.
Do I miss Fujifilm? No, because I am keeping my beloved XE2, which came out in 2013 and does have a suitable 23mm eye relief. As far as I know, only the XE1 also has a left EVF with 23mm point.
Do I miss Fujifilm lenses? I do miss the 35mm f1.4, so I will probably buy that back one day. I was happy to sell it now to fund my A6400 and it was decentered. Otherwise I appreciate the faster focus I get with Sigma lenses on the Sony cameras, especially with the A6400 which has great continuous autofocus, which isn't really a thing on my 2013 XE2.
Is Sony APSC (E Mount) better than Fujifilm APSC (X Mount)? That I cannot answer. For me the EVF issue makes Sony the default winner. But for others there is so much to consider e.g. Fujifilm can do some amazing specification video, but Sony is more vlogger friendly. Sony has faster tracking autofocus, but Fuji lenses have aperture rings usually. Both have cheap cameras and lenses you can try. Both also have high end professional options.
