There are many ways to cook bulgogi (Korean marinated beef). Today, I will show you how to make Seoul style bulgogi beef at home! Deliciously marinated thinly sliced beef is cooked with various vegetables and potato starch noodles in a small amount of water. This recipe gives you tender meat and vegetables soaked in mouthwatering broth. This Seoul style bulgogi can be served with hot steamed rice!
📋 Ingredients:
Beef, thinly sliced - 450g (Shabu Shabu cuts)
Medium onion - 1
Green onions - 2
Carrots - 1/2 cup
Enoki mushrooms - 2 cups (1 pack)
Oyster mushrooms - 3 cups
Potato starch noodles - 100g
Water - 2 cups

[Bulgogi Marinade]:
Soy sauce - 7.5 tbsp
Brown sugar - 2 tbsp
Corn syrup - 1 tbsp
Minced garlic - 3 tbsp
Ground black pepper - 1/2 tsp
Sesame oil - 1 tbsp
Korean plum extract - 1 tbsp (if you don't have the plum extract, you can use 1/2 tsp of lemon juice + 1/2 tbsp of brown sugar)
👩🍳 Instructions:
1) Soak the potato starch noodles in water for 1 hour, drain and set aside to cook later.
2) Mix all the marinade ingredients in a bowl. Add the beef into the marinade. Detangle each meat piece as you coat it with the marinade. Cover and marinate the meat for 1 hour in a fridge.
3) Slice all the vegetables. Place the vegetables and marinated meat in a pot and add water.
4) Cover and bring it to a boil on high heat. Once it starts boiling, reduce to medium heat and detangle the meat. Cover and cook at medium heat until vegetables and meat are mostly cooked, for about 5 minutes.
5) Add in the potato starch noodles, cover and cook for 2-3 minutes.
6) Taste and add more sugar, soy sauce, or water if desired.
7) Serve with hot steamed rice.
