Recipe for Crunchy Almond Crisps.
Yields 24 crisps
Ingredients:
1 large egg
90g Baker's sugar
2 Tbsp melted butter
2 Tbsp almond flour
150g sliced almonds
1 tsp pure vanilla extract
Directions:
1. Combine egg and sugar in medium sized bowl. Beat at low speed for 1 minute. Baker's sugar can be substituted by blitzing granulated sugar.
2. Add butter and continue to beat for another minute or until well combined.
3. Stir in almond flour. Mix well.
4. Fold in sliced almonds until all almonds are coated in batter.
5. Add vanilla and stir for a few more seconds.
6. Preheat oven to 350°. Line cookie sheet with silicone liner and place in oven for a few minutes before use.
7. Scoop 1 heaping teaspoon of almond mixture onto cookie sheet, 1 inch apart. Spreading mixture into a single layer or as thin as possible.
8. Bake for 9-10 minutes until golden brown, rotating halfway through.
**Optional** Egg wash when rotating-whisk an egg with a tablespoon of water, lightly brush on top for shine
9. Place on baking rack and let cool. Store in airtight container for up to 7-10 days.
