Making pork rinds, cracklins', chicharrones, or whatever you wish to call these is not as difficult as you may think. The difficult part for me is getting the skins to start the project. I got lucky and found a spot where I may be able to get them regularly, even though its a 90 minute drive each way.
This process is pretty easy and it has a tasty reward at the end!
