Good day, friends. I have here this Maghrebi egg dish poached in tomato sauce called shakshuka, season with spices and garnished with herbs. This dish is also popular in some Middle East countries.
Ingredients:
.2 tablespoons olive oil
.1 diced onion
.1 diced red bell pepper
.4 cloves garlic, chopped
.2 teaspoons sweet paprika powder
.1 teaspoon ground cumin
.1/4 teaspoon chilli powder
.2 tablespoons tomato paste
.5 tomatoes, diced
.1 teaspoon salt
.1 teaspoon sugar
.1/8 teaspoon black pepper
.1/2 cup water
.5 eggs
.chopped parsley and cilantro
How to:
.Dice the onion, red bell pepper and tomatoes. Chop the cloves garlic and set aside.
.Heat 2 tablespoons olive oil in a pan and saute the onion and bell pepper for about 5 minutes over medium high heat.
.Add the garlic and saute it for about 1 minute.
.Add the paprika powder, cumin powder and chilli powder. Stir for a minute to bring out the flavors of the spices.
.Add the tomato paste and saute it for a minute or 2. Sauteing the paste will enhance the color and flavor of your dish.
.Then add the tomatoes and give it a good stir. Season with salt, sugar and black pepper. Give it a good stir.
.Add 1/2 cup water and let it simmer for 15 minutes or until the sauce thickens over medium low heat. Stirring it occassionally.
.When the sauce is already thick, create a well and carefully add an egg in each well. Careful not to break the yolks.
.Turn the heat to low. Cover and let it cook for 5-8 minutes. It depends on how soft you like your eggs.
.After5-6 minutes, check on the eggs if they are cooked to your preference.
Turn off the heat and garnish with parsley and cilantro. The more herbs, the better.
. Serve shakshuka with warm bread. Enjoy this super easy, delicious and beautiful Shakshuka.
