Ingredients
10g fresh parsley
10g fresh sage
1 apple, cored and quartered
1 onion, halved
2 garlic cloves
20g olive oil
500g pork mince
1 tsp fennel seeds
2 tsp English mustard
200g feta cheese, crumbled
1 pinch black pepper
1 pinch sea salt
1/2 tsp chilli flakes
1/2 tsp dried oregano
2 sheets ready rolled puff pastry (or homemade rough puff pastry)
1 Tbsp black sesame seeds
1 large egg
50g whole milk
Method
Place the parsley and sage in the mixing bowl. Chop 2 Sec. / Speed 8. Transfer into a separate bowl. Set aside.
Add the apple into the mixing bowl. Chop 3 Sec. / Speed 5. Transfer in the bowl with the herbs and set aside.
Add the garlic and onion to the mixing bowl. Chop 2 Sec. / Speed 7. Add the olive oil and fry 10 Min. / 120C / Speed 2 / no measuring cup.
Leave the onions to cool in the mixing bowl.
Meanwhile, preheat the oven to 200C / 180C Fan / Gas Mark 6. Line a large baking tray with a silicone mat or greaseproof paper. Set aside.
Once the onions have cooled, add the herbs, apple, pork mince, fennel seeds, mustard, feta cheese, black pepper, salt, chilli flakes and oregano and combine 10 Sec. / Speed 5.
Place the puff pastry sheets on a floured surface and divide the sausage mixture into two. Place in the centre of each puff pastry sheet as a long sausage.
In a small bowl combine the egg and milk with a fork and brush on either side of the sausage log. Fold over the pastry from one side to the other and, using a fork, seal the seam by pressing it into the pastry.
You can now either leave the sausage roll logs whole or cut into pieces. Place on the prepared tray, brush with the remaining egg wash and sprinkle over some sesame seeds. Bake for 20-25 minutes until golden brown and all the juice from the sausage meat has evaporated. Serve immediately while still hot. You can also leave to cool and freeze. Defrost before heating in the oven. You could also freeze the sausage rolls uncooked, cut into pieces, and defrost before baking.
