Kimchi Filling:
1 cup kimchi
½ tsp red pepper paste (gochujang) or 1 tsp red pepper flakes (gochugaru)
½ tsp soy sauce
½ tsp sugar (skip if your kimchi is sweet)
½ tsp vinegar (skip if your kimchi is well fermented)
1 tsp sesame oil
Sesame seeds

Thin Omelet Strips:
4 eggs
½ tsp soy sauce
1 tsp mirin

Seasoned Rice:
2 cups cooked rice
2 tsp sesame oil
¼ tsp salt

Assembly:
