Hot n Sour Soup
Ingredients:
1 tbsp oil
1 tbsp garlic (finely chopped)
1 tbsp ginger (finely chopped)
1 chilli (finely chopped)
1 spring onion (chopped)
100gm carrot (finely chopped)
100gm cabbage (finely chopped)
100gm capsicum (finely chopped)
100gm beans (finely chopped)
500ml water
1 tsp soy sauce
1 tsp vinegar
1 tsp chilli sauce
½ tsp pepper powder
½ tsp sugar
½ tsp salt
3 tbsp spring onion greens (chopped)
for corn flour slurry:
1 tbsp corn flour
3 tbsp water
INSTRUCTIONS
firstly, in a large kadai heat 2 tbsp oil and stir fry garlic, ginger and 1 chilli.
add spring onion and stir fry until it softens.
further, add carrot, cabbage, capsicum and beans.
stir fry for 2 minutes or until the veggies are half cooked.
add water, soy sauce, vinegar and chilli sauce.
also, add ½ tsp pepper powder, ½ tsp sugar and ½ tsp salt.
boil for 3 minutes or until flavours is absorbed well.
now prepare cornflour slurry by mixing 2 tbsp cornflour in ¼ cup water.
pour the slurry into the soup and mix well.
continue to boil for 2 more minutes or until soup thickens slightly.
finally, add 2 tbsp spring onion and enjoy hot and sour soup.
