Chinese New Year is just around the corner. Lotus Root With Peanuts Soup is a traditional Chinese New Year reunion dinner dish that symbolizes health, wealth and prosperity.
-Red dates symbolize wealth, prosperity, as well as fertility
-Lotus roots symbolize abundance
-And peanuts that symbolize the multiplication in wealth and good fortune

Ingredients:
300 g pork or chicken bones or pork ribs
200g lotus root
2 litres water
1 dried squid (about 20g)
6 red dates
100 g peanuts
3 slices of ginger
Salt to taste
