Who doesn't enjoy a traditional fruit cake, with the flavor of citrus peel, dried fruits, and the crunch of almonds and walnuts inside. This easy low-carb Christmas cake tastes just like the real thing, but without the carbs and sugar.

INGREDIENTS

▢4 large eggs separated
1/3 cup rum (optional)
▢4 tablespoons unsalted butter melted and slightly cooled
▢1 tablespoon vanilla extract
▢1 tsp cinnamon
▢1 tsp ginger
▢1 tsp nutmeg
▢1 tsp allspice
▢1 tbs keto maple syrup
▢1 tablespoon freshly grated orange & Lemon zest
▢½ kosher salt or ¼ teaspoon fine salt
▢1½ cups blanched finely ground almond flour
▢3 teaspoon baking soda
▢½ cup dried cranberries
▢1 cup chopped walnuts
▢1 cup chopped peanuts
almonds to garnish
