Baked beans are a requirement at most summer cookouts and here is an easy way to have some sweet and savory beans made in the Instant Pot while you go about preparing the rest of the meal. By the way, I've never gone out of my way to reach for the baked beans at a barbecue, but these may have changed my mind!
The inspiration for this recipe came from Jill Selkowitz’s recipe blog This Old Gal. I made some very minor modifications based on personal preference and what I had available. Here’s a link to her original recipe: [ Ссылка ]
Check out her site - she has an endless collection of great recipes!
NOTE: If you like firmer beans, try cooking for only 70 minutes, then add more time if they are too firm. If you like super-soft beans, cook for 90 minutes. You can always replace the lid and cook in additional 10-minutes increments until you like the results.

Instant Pot Duo 6 Quart: [ Ссылка ]
Today’s Ingredients:
1 lb dried navy beans, sort and rinse – no soaking required
8 oz salt pork (or bacon)
1 large onion, chopped
3½ cups water
⅓ cup ketchup
⅓ cup molasses
¼ cup maple syrup
¼ cup brown sugar
1 TB Worcestershire sauce
1 TB apple cider vinegar
½ TB ground mustard
½ tsp salt
½ tsp black pepper
Instructions:
1. Heat the Instant Pot on sauté mode and add the salt pork and onions when the display reads “HOT.” Cook, stirring occasionally, until most of the fat has rendered from the bacon and the onions have sweated out much of their liquid. We’re not trying to cook either all the way through, only to have fat and liquid rendered – this step should take about 5-7 minutes.
2. Add all of the remaining ingredients and stir to combine and dissolve the sugar. Scrape up any stuck on bits from the bottom of the top as you stir – there shouldn’t be much since we didn’t actually let the bacon get crispy.
3. Lock and seal the lid and cook on manual/high for 80 minutes followed by a 15-minute natural pressure release. Then release any remaining pressure before reopening the lid.
4. Stir and taste for flavor – add salt or sweetener (maple syrup or molasses) as needed.
5. ENJOY!
