From Instagram to my Glass... A challenge I gave myself to make the Mai O Mai from the True Laurel in San Francisco. The cocktail replication of this unusual Clairifed Mai Tai wasn't that easy since I didn't have the specs. All I had was a picture and a small description. What do you think? Should I make more of these?
Here's the link to the nutmilk bags. This size is good to clarify approx a batch of 5 cocktails at the time. Get a few to make larger batches or simply get a bigger bag but the technique remains the same. Cheers!

How to make the Pistachio Orgeat

How to make the Coffee and vanilla rum I adjusted the ratios so you don't have more than for 5 cocktails (Adjust accordingly to your quantity of punch)
Add 10 ml of coarse ground coffee in a coffee filter.
Pour over 2 oz of dry aged rum like Havana Club special or 7 years
Then add 4 more oz of uninfused rum of the same kind
Add 1 oz of simple syrup and the seeds of 1 cm piece of vanilla pod
Mix, fine strain and bottle up
How to make my cocktail replication of the Mai O Mai
225 ml Light white rum
75 ml Aged Jamaican rum
75 ml Dry Curaçao
150 ml Pistachio orgeat
150 ml Lime juice
Mix and pour over 150 ml Whole milk
Filter thourgh nut milk bag (as shown in the video)
In a mixing glass, add 100ml of the clarified cocktail
Add ice and stir
Strain over a large ice cube in a rocks glass
Pour 0.5 oz of the infused rum to make a float
Garnish with a cherry and a small sprig of mint
FOR THE SINGLE SERVE YOU WILL SIMPLY DO 1/5 OF THE QUANTITY
1.5 oz Light rum
0.5 oz Aged Jamaican rum
0.5 oz Dry Curaçapo
1 oz Pistachio Orgeat
1 oz Lime juice
1 oz Whole milk
