Kappa Biriyani Recipe.
Kappa Biriyani is a street food legend. A traditional dish, it is a delicacy among Christian families in Kerala. Known in many names Ellum kappayum, Asiad, and kappa biriyani. The preparation is very simple, first tapioca is boiled and meanwhile we can make beef masala. Mix the beef and tapioca. The final tempering really completes the kappa biriyani.

Ingredients:
Tapioca – 2.5 kg.
Coconut – 1 cup, cut into small pieces.
Coconut – grated 1 cup.
Shallot – 4 no, sliced.
Beef ribs – 1-1/2 kg.
Green chilli – 4 no, cut into halves (Or according to your spice level).
Ginger - One large piece, finely chopped.
Garlic – 12 sliced.
Onion – 2 medium sized, sliced.
Turmeric – 1/2 tsp.
Curry leaves -
Coriander Powder – 2 tbsp.
Chilli Powder – 2 tbsp (Kashmiri + ordinary).
Meat Masala – 1 tbsp.
Pepper powder – 1 tsp.
Garam masala – 1 tsp.
Coriander leaves.
Salt to taste.
Oil – As needed.
Mustard, curry leaves, shallot, and red chilli
Preparation:
In a large sauce pan, heat water for tapioca. When the water starts boiling add tapioca. Cook the tapioca. When it is almost done, drain the water. Keep it aside.
In a saucepan, roast the coconut pieces using oil. Put it aside.
In the meantime, we can prepare the beef.
In a saucepan, heat some oil. Add grated coconut, shallot, and 2 springs of curry leaves. roast it well. When the coconut turned brown, remove it to a plate.
In the same saucepan, add green chilli, ginger, garlic, onion, turmeric, and curry leaves. saute in between. When the onion is turning brown, add coriander powder, chili powder, and meat masala. Stir well. Cook till its raw smell is gone and turning brown. Switch off the flame. Our masala is ready.
Take a pressure cooker. Add cleaned beef and mix it with the prepared masala. Add salt to taste. 8 to 9 whistles are enough. Let the cooker to cool down.
Take a large sauce pan and heat it up. Add beef ribs and cooked tapioca. Add the roasted coconut pieces, roasted coconut, garam masala, pepper powder, and coriander leaves. Cook for 10 to 15 minutes. Mix it well.
Heat some oil in a pan. Add the mustard seeds. Allow the seeds to pop. Add chopped shallot and curry leaves. Add this mixture to the tapioca. Our delicious tapioca biriyani is ready.
Recipe Tips
If you have time, make this using earth oven. Add vinegar to the beef it will became more softer.
