80 grams (1 cup) Sugar
100 grams (¼ cup + 3 tbsps) Butter

Second Dough
55 grams (¼ cup) Bread Flour
55 grams (¼ cup) egg yolks
All of the Emulsified Butter (190 g)
5 grams (½ tsp) Diastatic Malt Powder
6 grams (1 tsp) Salt

50 grams (7 tbsp) Confectioners Sugar
