Recipe for Subway Like Italian Herbs & Cheese Bread:

[Step 1]
For the bread starter:
* 75g all purpose flour
* 15g (0,5 tsp) diastatic malt powder
* 3g fresh yeast
* 60ml lukewarm water

Mix everthing together and cover it up. Let it rest for 4 to 6 hours (room temp.)

[Step 2]
For the dough:
* 600g all purpose flour
* 40g butter
* 17g fresh yeast
* 50g white sugar
* 15g (0,5 tsp) kosher salt
* 15g (0,5 tsp) diastatic malt powder
* 340ml lukewarm water

Knead everything together with the bread starter for 5-10min.

[Step 3]
Let the dough rest for a least 30min in a warm spot. Use your oven if you can lower it to around 90° F / 35° C.

[Step 4]
Gently fold the dough multiple times and put it back to rest for 10min. Repeat this step 3 times to bring structure to the final bread.

[Step 5]
Rasp 20g of parmesan cheese and mix it with 3-4 tablespoons of dry oregano.

[Step 6]
Cut the dough into 4 or 5 equal pieces, spray it with water and roll it in our parmesan chesse / oregano mixture.

[Step 7]
Bake the loaves for about 20-25min @ 350° F / 180° C with a "fireproof bowl" of water at the oven! Or activate the steam function of your oven if you have one.
[Step 8]
Cool down and enjoy!
