Pickle soup? For real? Soup, with chopped pickles AND pickle juice right inside it? TRUST me! Today we are making Polish Dill Pickle Soup in the Instant Pot! Now if you don't have an instant pot, you can just make this in a regular pot, just simmer until your potatoes and carrots are soft. Polish Dill Pickle Soup is made with pickles and pickle juice right inside the soup! The key to this, is using a really good flavored pickle. I would advice a higher quality pickle, or maybe one you have canned on your own! I know it sounds crazy, but try it!

Ingredients:
1 1/4 cup chopped celery
1 1/4 cup chopped carrots
2 garlic cloves minced
4 - 6 russet potatoes (1 inch cubes)
8 cups of chicken (or veggie) stock
1.5 - 2 cups of chopped pickles
1/2 tsp white pepper
1 tsp dill weed (optional)
1 cup Pickle juice (add small amounts at a time until flavor is to your liking)

To thicken soup (optional)
1/2 cup heavy cream
1/4 cup flour
