Ingredients:
4 large potatoes, peeled and thinly sliced
1 onion, finely chopped
6 large eggs
1/2 cup olive oil
Salt to taste
Pepper to taste
Instructions:
Prepare the Potatoes and Onions: In a large skillet, heat olive oil over medium heat. Add the sliced potatoes and onions, cooking until tender but not browned, about 15-20 minutes. Season with salt and pepper.
Beat the Eggs: In a large bowl, beat the eggs with a pinch of salt.
Combine: Drain the potatoes and onions from the oil and let them cool slightly. Mix them into the beaten eggs.
Cook the Omelet: Heat a small amount of the reserved oil in a non-stick skillet over medium heat. Pour in the potato and egg mixture, spreading it evenly. Cook on low heat until the eggs are set and the bottom is golden brown, about 10-15 minutes.
Flip the Omelet: Place a large plate over the skillet and carefully flip the omelet onto the plate. Slide the omelet back into the skillet to cook the other side until golden and fully set, about 5 minutes more.
Serve: Let the tortilla cool slightly before slicing. Serve warm or at room temperature.
