Today Matt made some PERFECT copycat McDonald's French Fries!
Here's the Recipe (for a single batch):
Ingredients:
4 large & long baking potatoes
1/2 Cup Sugar
1/2 Cup Light Corn Syrup
1 large bottle of Vegetable or Canola Oil
Salt (to taste)
12 cups water (to boil)
8 cups cold water (to soak raw fries)
1 large baking/cookie sheet
1 roll of paper towels
1 metal strainer
Starting with the potatoes, cut off the sides and then cut off the ends to make the potato like a rectangle .
Cut the potato in slices about 1/8 inch thick
then lay those slices flat and cut strips the same 1/8 thickness
so your fries are the same size as McDonald's fries.
Soak raw fries in a large bowl of cold water for 5 minutes then drain on a paper towel and pat them dry.
In a large cooking pot, bring 12 cups of water, just to a boil, then stir in corn syrup and sugar. Once the sugar is dissolved and
the water returns to a boil "turn off the heat" and drop in the fries.
Let them soak for 10 minutes then drain on paper towels and pat them dry.
Place the fries in the freezer for 20 minutes.
While the fries are in the freezer, heat your oil to 350 degrees.
After 20 minutes, remove fries from the freezer and drop them in the oil. Deep fry them for 2 minutes only.
Remove them from the oil and lay them on your baking sheet and let cool for 10 minutes.
After they have cooled, drop them back in the oil for 7 minutes.
When they come out of the fryer lay the fries out and dust them with salt.
Give them a toss.
