Tonight I made a venison backstrap on my Oklahoma Joe's smoker. I brined it for an hour and a half, then seasoned it, and smoked it until it got to 110*F, then pulled it off and let it rest for a few minutes before reverse searing it in a cast iron pan inside the firebox. It turned out phenomenal! Tender and juicy! The sides we had were mushrooms in a garlic butter sauce, mashed red skin potatoes, and oven roasted broccoli and cauliflower. If you have not tried making your backstraps this way, I highly suggest it! Our kids even loved it and the whole thing was gone in no time. Full video coming soon.
