Cantonese whole steamed fish with soy sauce, one of the world's great ways to eat a fresh fish. The fish we're cooking today - Sea Bass - is a personal favorite of mine... it's simple, healthy, and extremely delicious.
Because the dish itself is rather simple, we also wanted to show you how to kill and clean the fish to prepare it for cooking. In China, the markets are often sold out of the good fish by late morning, so if you want a super-fresh fish for dinner it's best to keep it alive and kill it right before cooking. I know it's sort of a messy job, but killing the fish real before steaming really does produce an extremely tasty result.
