UBE KALAMAY is a purple yam flavored sticky rice cake topped with coconut curd. It is eaten a snack or dessert in the Philippines.
Ingredients:
800 ml coconut milk 2 cans
2 cups glutinous rice flour
1 1/2 cup white sugar
1/2 cup water
500 g ube or purple yam grated
2 tsp ube flavoring or more as needed
For the latik:
400 ml coconut cream 1 can
