Sundried Tomato Saffron Lemony Pasta 🍋 🍝 🇮🇳 x 🇮🇹@sepps x @radhidevlukia - Such a simple & delicious recipe that’s ready in no time and has a some serious flavor!
BLEND
1 cup soaked cashews
1/2 cup sundried tomatoes
3 tbsp nutritional yeast
1/4 C lemon juice
1 tbsp chili oil
1 1/2 cup almond milk
1/4 tsp or a pinch dried saffron
1 tsp salt
1/2 tsp pepper
1/8 tsp asafetida ( optional)
Gremolata;
handful crushed pistachios finely chopped
zest of 1 lemon
handful fresh parsley finely chopped
Sprinkle of salt & pepper
- add all the sauce ingredients into a blender and blend till smooth
- Add the sauce with the cooked paste of your choice
- Sprinkle generous amount of Gremolata and a drizzle of EVOO and Parmesan
- Say a prayer of gratitude and enjoy 🥰
