Using date seed + dandelion root coffee is the perfect coffee replacement!

To begin this recipe remove the seeds from the whole dates
The seeds are what are uses as the coffee alternative
Once you have removed all the seeds rinse them off to remove any stickiness
We used 1/4 cup of date seeds and 2 tbsp of dandelion root
*the dandelion root is optional*
We added the dandelion root & date seeds to parchment paper and roasted in the oven for 10 minutes at 400 degrees.
(The dandelion root roasts very quickly, so if you like a very strong roasted taste allow the date seeds to roast first for 20 minutes and then add the dandelion root in for only 10 minutes.)
Once you roast the date seeds and dandelion root, add it into your coffee grinder
You should be left with a dark brown powder that smells like coffee
From here you can add as much powder as you would like just depending on how potent you want it to be
We used all the grounded coffee powder in our coffee drip by covering the powder with boiling hot water

Iced Date + Dandelion Root Coffee
Pour your coffee over ice
Add your plant based milk of choice ( we used coconut milk )
*Optional* you can also add ceylon cinnamon, date syrup or agave syrup for flavor


Date Syrup
Combine your left over dates and spring water in a pan
For every cup of dates add double cups of spring water
For example we used 3 cups of dates and 6 cups of spring water
Cook until it becomes thicker and some of the water begins to absorb
About 10 minutes on a medium high heat
Use a straining bag / cloth to strain the dates
The liquid that your left with is the date syrup
If you would like a thicker date syrup add this liquid to a pan and cook on a medium low heat until the date syrup begins bubbling, getting darker and thicker
Store the date syrup in the refrigerator and use in smoothies, tea, over waffles, etc.
