Here's what we've done with this garlic thus far:
- The process starts the fall before when I plant all the individual cloves.
- Then, from the end of June to the beginning of July, I harvest all of the heads of garlic.
- Once they're harvested, they need to be dried and cured. In a shaded area (I use my garden shed), I place the heads on old screens for good air circulation. Usually, this process takes 2-3 weeks.
Once all the stalks and leaves are completely dried, it's time for the finishing steps:
- Cut off the roots and trim the stalk down to 1 to 2 inches.
- Clean off any dirt from the husk.
- Transfer to my basement or any dark area. At this point, they're ready for use!
Just FYI: These hard-neck garlic varieties do not keep as long as soft-neck. Hard-neck will keep 4-5 months and soft-neck for 6-8 months.
In a short time, I'll start this process all over again!
