Ginger is one of my favorite ingredients. It has an unusal aroma, very close to a lemon, but a spicy, slightly bitter flavor, and I use it a ton in my Southeast Asian, Chinese, Indian recipes, as well as many more "western" recipes when I want to add a but of a twist.
But before you use ginger, you probably need to chop or mince it. Ginger is pretty fibrous, and really needs to be chopped well or minced, to really blend well. In this video, I show you the knife skills you'll need to do just that.
