Here's a new approach on making Mexican Street Corn aka #Elotes. Instead of layering the ingredients, how about combining them together?

Prep: 15 minutes Grill: 8 minutes Serves: 4

Ingredients:
• 4 medium ears fresh white corn, silks and husks removed
• 1 tablespoon olive oil
• 1 garlic clove, minced
• ¼ cup crumbled queso Cotija
• 2½ tablespoons crema Mexicana
• 2½ tablespoons mayonnaise
• 2 tablespoons chopped fresh cilantro plus additional for garnish
• ¾ teaspoon hot sauce
• ¼ teaspoon chili powder plus additional for garnish
• Lime wedges

Directions: Prepare outdoor grill for direct grilling over medium-high heat. Brush corn with oil. Place corn on hot grill rack; cover and cook 8 minutes or until grill marks appear, turning once. In wide, shallow dish, stir garlic, Cotija, crema, mayonnaise, cilantro, hot sauce and chili powder. Carefully roll hot corn in mayonnaise mixture. Sprinkle corn with additional cilantro and chili powder; serve with lime wedges.
