Euan McLennan, Pukka’s Herbal and Sustainability Director, shows you how to make a quick and easy ‘mint mocktail’ with our Pukka Three Mint tea bags. This recipe is easy and fun to make and you can customise it however you like with your favourite seasonal fruit or berries.
What you’ll need
Equipment
Glasses, chopping board and knife to cut fruit, glass or Pyrex jug and cocktail muddler (or you could use the end of a rolling pin)
Ingredients - This makes four glasses
4 limes
Fresh fruit, anything that is in season – strawberries work well
Handful of fresh mint leaves
Teaspoon of organic brown sugar
3x Pukka Three Mint tea bags
Method
First, make the mint tea concentrate: Take your three tea bags and cover them with 750ml of boiled water.
Leave to infuse for at least 15 minutes in a covered container.
Strain and leave to cool in the fridge for at least an hour.
Once it’s cool you can start to assemble.
Muddle the lime juice, brown sugar and mint leaves together in a glass.
Add your ice and fresh fruit in alternate layers.
Pour over your cooled mint tea.
Before you serve, garnish with a fresh mint leaf.
Little tip - smack the mint leaves against the back of your hand to release those minty essentials oils.
You could also try growing your own mint. It’s great for pollinating bees and is really easy to grow in your garden or windowsill.
