Ayamase stew, also known as Ofada/designer stew, is one of Nigeria's most popular dishes.
Made with palm oil, locust beans & bell peppers.
In this recipe I have used a variety of coloured peppers, but you you can use all green coloured peppers together.
This stew is best served with ofada rice, or any kind of rice you wish.

INGREDIENTS TO BOIL THE MEAT
- Assorted meat
- Onion, ginger & garlic (blended)
- 1 Tsp dried thyme
- 1 Tsp curry powder
- Salt (to taste)
- Seasoning (Knorr cubes)
INGREDIENTS FOR THE SAUCE
- 2 Green bell peppers, 2 yellow bell peppers, 1 large red bell pepper, 1 orange bell pepper, 1 paprika, 3 scotch bonnet & 2 large onions.
- 1 Cup palm oil
- 1 Medium sized onion (chopped)
- 2.5 Tbsp Iru/locust beans
- 2.5 Tbsp Crayfish
- Seasoning (knorr cubes)
- Salt
- 6 Boiled eggs
