I’m a little homesick, so I decided to make a classic southern food that reminds me of home. Southern cuisine is the sort of food that you get emotionally attached to so I want to show you how to make beans and cornbread. This white beans and cornbread recipe will leave you feeling cozy and warm on the inside. It really is the ultimate comfort food recipe.
Cast Iron Buttermilk Cornbread
Ingredients:
* 2 cups self-rising cornmeal
* 3/4 cup flour
* 2 eggs (room temp)
* 2 cups buttermilk (room temp)
* 1 Tbsp shortening
Instructions:
* Put shortening into a 9-inch iron skillet. Place skillet in oven. Heat oven to 425ºF with skillet inside.
* Combine the remaining ingredients. The batter should be the consistency of waffle batter. Add more buttermilk if necessary.
* Once the oven is preheated, remove skillet and pour in the batter. Bake for 25 minutes or until golden brown. *Clean toothpick in the center = done.
White Beans Recipe
Ingredients:
* 1lb great northern beans (soaked overnight)
* 8 cups of water
* 4 Knorr vegetable bouillon cubes
* 2 TBSP salt and pepper
* 2 TBSP granulated garlic
* 2 TBSP Italian herbs
* 1 TBSP poultry seasoning
* 1-2 bay leaves (optional)
* 1 smoked ham hock (optional)
* 1 dried ancho chile
Instructions:
Combine all ingredients in a heavy bottom pot like a Dutch oven. Bring contents to a low boil then cover and simmer over low heat until the beans are tender and the broth has thickened. The longer you cook them, the more flavorful and creamy they will be.
