My favorite coconut shrimp recipe🍤
Ingredients:
40gr flour
Salt pepper to taste
2 large eggs beaten
50 gr panko breadcrumbs
100 gr shredded sweetened coconut
vegetable oil for frying
500 gr large shrimp peeled and deveined (preferably with tails)
sauce of your choice for dipping
Recipe:
Combine together the flour, salt, and pepper. In a separate dish, beat the eggs. In another dish, mix together breadcrumbs and coconut.
Dredge each shrimp in the flour mixture, shaking off any excess. Dip in eggs, then coat in breadcrumbs mixture. Set the coated shrimp aside while you coat the remaining shrimp.
Cover the bottom of a large skillet with oil and set over medium heat. Fry the coconut shrimp in batches. Flip after 2 minutes and fry the other side for 2 minutes or until crispy and golden brown. Serve with the sauce of your choice, I prefer sweet chili sauce. Enjoy!
