This is such a simple and easy recipe for stuffed Anaheim peppers. We take a traditional taco meat, stuff them, then top them with some cheese. Can't get any easier than that. Top them with some lettuce, salsa, tomatoes, pico, guacamole, or sour cream. For a softer pepper, you an roast them first, take off outer skin and then fill them, or boil them for 4-5 minutes, let them cool, then peal them, or do what we did, just stuff them. It will leave them a little crunchy. I love them softer, mom likes them a little crunchier, so it depends on your own personal taste.
Take Anaheim peppers, wash, cut in half and clean out the insides. Spray entire pepper with non stick cooking spray.
Prepare 1 pound of taco meat using 1 lb of ground beef and your favorite taco seasoning mix. Follow directions.
Stuff pepper with taco meat and then top with shredded pepper jack cheese.
Bake at 375 for 20-30 minutes.
Top with your favorite toppings. Enjoy
