The village of Goult dominating the valleys of Calavon and Limergue is perhaps the least known and visited of the beautiful provençal villages in the Luberon. This picturesque village offers beautiful houses with stone and ochre facades. Alleys, vaulted passages, arcades and ancient porches guide the charmed steps of visitors to beautiful squares in the shade of century-old hackberry trees.
Goult is situated around the 12-13th century Romanesque/Gothic church 'Eglise Saint-Sébastien' and the 17th century 'Chateau de Goult'. The castle and the remains of ancient ramparts seem to preserve the art of living and the sweetness of the Provençal soul that reign in the village. Around Goult, olive groves, holm oaks and agricultural plantations surrounded by pretty dry stone walls form a beautiful green setting. The terraces of cultures are carefully maintained and restored by the volunteers of the Conservatoire des Terrasses.
The 'moulin de Goult' or the 'Jerusalem mill' located at the top of the village, appears from 1750 on the cadastre of Cassini where it bears the name of Tré Casteau (outside the castle). Later it took the name of the district called Jerusalem, probably in memory of the crusades where the lords of the place of Agoult went to war. This mill of Goult in the Luberon is a masonry tower on two levels. The circular wall with a thickness of 1.2m. is topped with a crown of ashlars, called "cimas". Below a vaulted base would have been used to load bags of flour. By the staircase we access loa room of the millstones where we discover the framework and the mechanism of operation. Its conical roof, offering less grip to the mistral consists of boards assembled according to the slope. At the top, a weather vane communicating with the inside of the mill informs the miller about the direction of the wind. This roof is movable on the rolling path, or walkway, consisting of an assembly of wooden pieces in an arc. This movement makes it possible to orient the wings facing the wind. The work of Maïté Laurent "Goult chronicle of a village in Provence" tells us that at the beginning of the thirteenth century, Raymond Beranger, marquis and count of Provence and Forcalquier, and Guilherma, countess of Provence and Forcalquier, recognizing the services and fidelity of the men of the place of Agoult, give and concede certain privileges to the inhabitants and their successors, in particular that of being able to build grain mills and oil mills.
