材料：
五花肉(整塊帶皮) 600公克
胛心絞肉500公克
豬皮200公克
蒜末30公克
紅蔥頭300克
醃小黃瓜100公克
Ingredients:
Pork belly (with the rind) 600 grams
Minced pork shoulder 500 grams
Pork rind 200 grams
Chopped garlic 30 grams
Shallots 300 grams
Small gherkin cucumbers 100 grams

調味料：
醬油180㏄
五香粉1茶匙
細糖3大匙
紹興酒100㏄
煮肉湯1400㏄
Seasoning:
Soy sauce 180cc
Five-spice powder 1 teaspoon
Sugar 3 tablespoons
Shaoxing rice wine 100cc
Boiled meat broth 1400cc

作法：
1. 紅蔥頭切片。
2. 炒鍋加入500㏄沙拉油，將作法1的紅蔥頭片放入炒鍋中，以小火炸至金黃，再取出瀝乾備用。
3. 燒一鍋水(約1500㏄)，水開後將五花肉及豬皮放入鍋中煮約25分鐘後撈出沖涼。
4. 五花肉及豬皮切小丁備用。
5. 熱鍋，倒入少許沙拉油，放入蒜末爆香，加入絞肉炒至肉變白鬆散，再加入五花肉炒勻。
6. 接著鍋中再加入紹興酒、醬油及細糖入鍋中炒勻，加入煮肉湯、豬皮丁及紅蔥酥、五香粉，小火熬煮約20分鐘至湯汁濃稠即可。
7. 裝一碗飯淋上肉燥，放上醃小黃瓜即可。
Preparation Method:
1. Slice up the shallots.
2. Put 500cc of salad oil into a wok, add in the shallots and fry them until they are golden brown then remove and let drain.
3. Fill a pot with water (about 1500cc,) after bringing to a boil put in the pork belly and pork rinds, cook for 25 minutes. Afterwards take them out and rinse them off.
4. Cut the pork belly and rind into small cubes and set aside.
5. Pour a little oil into a heated wok, add the chopped garlic and stir-fry, then add the ground shoulder meat and stir-fry until it becomes white and loose, then add the pork belly and saute while mixing it in well.
6. Then add the Shaoxing rice wine, soy sauce, fine sugar into the wok and stir it well. Pour in the boiled broth, shallots, crisp pork rinds, and five-spice powder. Let simmer for 20 minutes until the broth thickens.
Pour the minced pork over a bowl of rice and top off with gherkin cucumber and it's done.

醃黃瓜
Pickled cucumbers

小黃瓜 2條(約250克)
鹽 1/2茶匙
白醋 2大匙
細糖 2大匙
2 small gherkin cucumbers (about 250 grams)
Salt 1/2 teaspoon
White vinegar 2 tablespoons
Finely granulated sugar 2 tablespoons

作法:
小黃瓜洗淨切片，加入鹽拌勻後醃漬約5分鐘後擠乾水分。加入白醋及細糖拌勻醃漬5分鐘即成醃黃瓜。
Preparation Method:
Wash and slice the gherkin cucumbers, add salt and mix well to cure. After about 5 minutes squeeze them dry. Add the vinegar and sugar, mix well, let cure for 5 minutes then serve.
